Pinned it-Made it!! Pumpkin Cupcakes with Cinnamon Buttercream Icing

This past Monday was Thanksgiving Day up here in Canada, and this year my sister decided to host the dinner as my mom was out of town. My younger sister cooked the turkey, my hubby made a turkey minestrone soup, my older sister (who hosted) made a bunch of side dishes, my brother’s girlfriend brought the cranberry sauce (can’t have turkey dinner without it!), and I, of course, brought the dessert. Of course.
I love cupcakes and I love pumpkin so I looked up some pumpkin recipes on pinterest and tried it out.

I followed this pumpkin cupcake recipe to make my pumpkins. I still have issues measuring out the batter properly because my cupcakes never turn out a uniform size (some were huge), even still I probably could have made 30 cupcakes out of the recipe and not just 24.

For the icing I used this buttercream icing. Yummy! I don’t usually like icing. I did make a couple changes. Most obvious was that I added cinnamon. I added 1 teaspoon of ground cinnamon and reduced the vanilla to 1 teaspoon (down from three), the hubby thought I could have added another teaspoon but I was worried it would overpower the cinnamon taste. I also used 3% milk instead of cream since that is what I had on hand, and semi-salt butter instead of salted butter (full salt), for the same reason. So I guess really I didn’t use the icing recipe at all… But I do intend to make it exactly as its written someday.
